Seed Cookies

Ingredients
- 1 cup pumpkin seeds
- 1 cup sunflower seeds
- 1 ¼ cups brown rice flour
- 1 cup flax seeds
- ¾ cup sesame seeds
- ¼ cup black sesame seeds
- ¼ tablespoon salt
- ½ cup olive oil
- ½ cup maple syrup
- ½ cup tahini
- ¼ cup apple juice
- ½ cup rice syrup
Directions
- Grind the pumpkin and sunflower seeds finely in a food processor or blender.
- Mix dry ingredients together. Mix wet ingredients together.
- Pour wet into dry and mix well.
- Scoop onto parchment paper. Flatten with a fork.
Bake at 325 degrees for 17 to 22 minutes, or until golden brown.
Yield: about 36 cookies.
