Sweet Potato Hummus

What’s a great food medicine to keep your immune system strong?  Try this delectable sweet potato hummus!   The sweet potatoes are rich in vitamin C and loaded with 5 times your daily needs of  beta carotene .  These antioxidants protect the thymus gland one of your strongest immune organs.  The lemon keeps your body alkaline , an environment that the virus’s don’t find friendly.  While the garlic and cilantro add the antimicrobial & anti-inflammatory touch to keep those cold & flu bugs away!

Ingrediants:

  • 1 can (19 oz/540 mL) chick-peas, drained and rinsed
  • 1 cup (250 mL) mashed sweet potato (see above)
  • 1/4 cup (50 ml) each: lemon juice and water
  • 2 cloves garlic, minced
  • 1 tbsp (15 mL) tahini, sesame oil or peanut butter
  • 2 tsp (10 mL)  ground cumin
  • 1 tsp (2 mL) paprika
  • 1/4 cup (50 mL) cilantro leaves
In food processor, puree chick-peas, sweet potato, lemon juice, water, garlic, tahini, cumin, and cilantro leaves. (add 1 tbsp (15 mL) water at a time if the mixture is too thick.
Cover and refrigerate for up to 1 week.
