Bonus Bean Salad

Prep time: 5 minutes | Cooking time: 0
Serves 10

Ingredients

  •  1 cup ( 250 ml) each: cooked black beans, cooked soy beans and frozen peas
  • 1/2 cup (125 ml) each: (finely diced) red peppers and yellow peppers
  • 1/2 cup (125 ml) slivered carrots
  • 3 tbsp (45 ml) enerjive ™ basil, cilantro mint  nu herbal infusion
  • 1/2 cup (125 ml) Farmboy lemon garlic dressing

Directions

  1. Run cold water over beans & frozen peas in a colander and strain well.
  2. In large bowl combine beans, peas, peppers, carrots and enerjive ™ basil, cilantro mint  nu herbal infusion  and enjoy!

Mushroom Palm Salad

The warm garlic mushrooms enhance the dressing and wilt the greens…a yummy and satisfying salad.

Tip: Blanch asparagus by placing in boiling water for 1 minute then run under cold water

Ingredients

  • 1 tbsp (15 ml) olive oil
  • 3 cloves of garlic, minced
  • 1 cup (250 ml)  mushroom: brown, shiitake or other favourite
  • 6 cups (1500 ml)  mesclun mixed greens, washed and dried
  • 1/2 cup (125 ml) each: (slivered) red pepper, yellow peppers and orange peppers
  • 1 cup (250 ml)  asparagus, trimmed and blanched
  • 1 can heart of palm, drained, rinsed and sliced lengthwise

Dressing

Directions

  1. In medium frying pan, heat oil over medium-high heat
  2. add garlic and mushrooms
  3. Sautee for 5 minutes or until mushrooms are tender and the water has evaporated set aside
  4. Meanwhile, place mesclun geens in large salad bowl, add peppers, asparagus, heart of palm and sauteed mushrooms.
  5. In small bowl combine enerjiVe ™nu herbal infusion basil, cilantro, mint  and lemon dressing
  6. add to salad along with seeds when ready to serve.

Infuzed Pretty Peas

Prep time: 5 minutes | Cooking time: 0
Serves 4

Ingredients

Directions

  1. Run cold water over frozen peas and strain well.
  2. Add peas, chopped red pepper and enerjiVe ™ basil, cilantro mint  nu herbal infusion in a bowl and enjoy!

Tip: You can replace with edemame beans from   the frozen section of the health food section of your grocery store or oriental markets.

Bonus: Peas & Edamame are  excellent sources of low-calorie protein which is a great snack for all of our vegetarian athletes! 

One half cup has 11 grams of protein , 4 gms of fiber. and is one of the few vegetarian protein sources that have all nine of the essential amino acids the body can’t make. The fat in edamame is the heart-healthy kind, polyunsaturated and monounsaturated fats that help to lower cholesterol levels and reduce the risk of heart disease. Plus, they’re a caloric bargain at only125 calories. So enjoy!

Crab Salad

Crab has an excellent protein to fat ratio and has a very high source of  the antioxidant selenium!  Make this easy crab salad an easy dinner solution.

Ingredients

  • 1/4 cup lime juice
  • 1/4 cup rice wine vinegar
  • 1/8 cup extra virgin olive oil
  • 1 tsp honey
  • 1 seeded and thinly sliced cucumber
  • 2 stalks celery,thinly sliced
  • 2 green onions, thinly sliced
  • 1 tbsp enerjive™ basil, mint cilantro nu herbal infusion
  • 12 ounces ( 2 6 ounce ( 170g) cans of crab meat drained

Directions

  1. In a small bowl, combine lime juice,  rice wine vinegar, extra virgin olive oil,  honey, cucumber, celery, onions and basil, mint, cilantro nu herbal infusion.
  2. Add 12 ounces crab meat and toss to coat well.
  3. Divide 4 cups mixed salad greens or romaine lettuce among 4 individual plates. Top with crab mixture. Spoon any remaining dressing over the crab.
  4. Garnish with lime wedges and serve immediately.

Brain Boosting Antioxidant Salad

Can’t remember the person you just met?  Need more fuel for your workouts?  Like to know the secret of the fountain of youth?  Colour yourself blue! 

Research suggests that adding blueberries to your diet can reverse the effect of aging on coordination, balance and short term memory loss thanks in part to the large doses of flavonoides they deliver.  As an added bonus blueberries are one of the richest sources of antioxidants, very high in fiber and vitamin C. 

Try this antioxidant rich salad for your next meal.

Ingredients

  • 1 cup (250 mL) each: blueberries, raspberries and blackberries
  • 1 mango, cut into 1-inch (2.5cm) cubes 
  • 4 cups (1L) mixed greens ie mesclun mix

Dressing

Directions

  1. In medium bowl combine berries and mango.
  2. In small bowl whisk together lemon juice and olive oil
  3. Once blended, add enerjive(tm) basil, cilantro, mint nu herbal infusion
  4. Drizzle on top of mixed greens and toss!
